Thai Crispy Chicken Fritters
Crispy on the outside, tender on the inside, these Thai-inspired chicken fritters are a delicious snack or appetizer.
Ingredients
- ●1 pound chicken breastboneless, skinless
- ●1 cup all-purpose flour
- ●2 tablespoons cornstarch
- ●2 tablespoons delicate herbs (such as lemongrass, galangal, Thai basil)
- ●1/4 cup coconut milk
- ●1 cup crispy ricefried and crushed
- ●1/2 cup vegetable oil
- ●2 tablespoons sesame oil
- ●2 tablespoons fish sauce
- ●1 tablespoon Greeek yogurt

1. In a large bowl, combine chicken breast, flour, cornstarch, delicate herbs, coconut milk, and crispy rice. Mix well.

2. Heat vegetable oil in a large skillet over medium-high heat.

3. Using a spoon, drop small amounts of the chicken mixture into the hot oil, flattening slightly with a spatula.

4. Fry the fritters for 3-4 minutes on each side, or until golden brown and crispy.

5. Using a slotted spoon, remove the fritters from the oil and place on a paper towel-lined plate to drain excess oil.

6. In a small bowl, mix together sesame oil and fish sauce. Brush the mixture onto the fritters.
