Thai Chicken Noodle Stir Fry
Quick and easy Thai dish made with chicken, noodles, and crunchy vegetables. A flavorful and spicy meal for any occasion.
Ingredients
- β1 lb boneless, skinless chicken breast
- β1 package chinese noodles
- β1 cup crunchy vegetables (bell peppers, carrots, etc.)
- β2 tbsp Thai red curry paste
- β1 tsp fish sauce
- β1 tsp brown sugar
- β1 tsp soy sauce
- β1 tbsp vegetable oil
- β1/4 cup chopped fresh cilantro
Instructions

Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.

Add the chicken to the skillet and cook until browned and cooked through, about 5-6 minutes.

Remove the chicken from the skillet and set aside.

Add the Thai red curry paste to the skillet and cook for 1 minute, stirring constantly.

Add the crunchy vegetables to the skillet and cook until they begin to soften, about 3-4 minutes.

Add the cooked noodles to the skillet and stir to combine with the vegetables and curry paste.

Add the cooked chicken back into the skillet and stir to combine with the noodles and vegetables.
