German-Style Squid Croquettes
A German twist on traditional Spanish croquettes, featuring crispy squid filling.
Ingredients
- β1/4 cup squad inkfor squid ink sauce
- β1/2 pound sliced squidfor squid filling
- β1 cup all-purpose flourfor breading
- β2 eggsfor egg wash
- β1 package spanish croquette mixfor croquette filling
- β1/4 cup crispy fried shallotsfor garnish

1. In a medium saucepan, combine 1/4 cup of water and 1/4 cup of squid ink. Bring to a simmer and cook for 2-3 minutes.

2. In a separate pan, heat 1 tablespoon of oil over medium-high heat. Add sliced squid and cook for 2-3 minutes per side, or until cooked through.

3. In a large bowl, combine cooked squid, Spanish croquette mix, and 1/4 cup of crispy fried shallots. Mix well.

4. In a separate bowl, whisk together 2 eggs and 1 cup of all-purpose flour.

5. Using a spoon, drop the squid mixture into the egg wash, then coat in flour mixture to coat.

6. Heat about 1-2 inches of oil in a deep frying pan over medium-high heat.

7. When oil is hot, add the coated squid mixture and fry until golden brown and crispy.

8. Using a slotted spoon, remove the croquettes from the oil and place on a paper towel-lined plate to drain excess oil.
