Quick Kung Pao Chicken Stir Fry
A classic Chinese dish made with marinated chicken, peanuts, and vegetables in a spicy sauce. Serve over steamed rice for a quick and flavorful meal.
Ingredients
- β1 pound Chicken breastcut into bite-sized pieces
- β1/4 cup Peanutschopped
- β1 Bell peppersliced
- β1 Onionsliced
- β2 inches Gingergrated
- β3 cloves Garlicminced
- β2 tablespoons Soy saucelow-sodium
- β1 tablespoon Cornstarchto thicken sauce
- β2 tablespoons Cooking oilpeanut or vegetable oil
Instructions

Heat 1 tablespoon of oil in a wok or large skillet over medium-high heat.

Add the chicken and cook until browned, about 5-7 minutes. Remove from the wok and set aside.

Add the remaining 1 tablespoon of oil to the wok and stir-fry the peanuts, bell pepper, and onion until the vegetables are tender.

Add the ginger and garlic and stir-fry for 1 minute.

Add the soy sauce and cornstarch mixture to the wok and stir-fry for 1 minute.

Return the chicken to the wok and stir-fry until the sauce has thickened and the chicken is cooked through.
