Kenyan-Style Pork Stew
A hearty and flavorful stew inspired by Kenyan cuisine, made with tender pork and crispy spices.
Ingredients

- β2 teaspoons stew spice blend
- β2 tablespoons tomato paste
- β2 cups chicken broth

Heat oil in a large Dutch oven over medium-high heat.

Brown the pork cubes until browned on all sides, about 5 minutes.

Remove the pork from the pot and set aside.

Add the chopped onion and minced garlic to the pot and cook until the onion is translucent, about 5 minutes.

Add the chopped crispy onions, stew spice blend, and tomato paste to the pot and cook for 1 minute.

Add the browned pork, chicken broth, and water to the pot.

Bring the mixture to a boil, then cover the pot and transfer to the oven.
