Vegan Portuguese Fish Fritters
Crispy on the outside and golden on the inside, these fritters are a delicious vegan take on traditional Portuguese fish fritters. Serve with a side of your favorite dipping sauce.
Ingredients
- β1 block (14 oz) Tofudrained and crumbled
- β1 head Cauliflowergrated
- β1 cup Vegan Panko Breadcrumbsgluten-free
- β2 tbsp Lemon Juicefreshly squeezed
- β1 tsp Garlic Powderoptional
- β1 cup Basilfresh leaves, chopped
- β1 cup Vegan Breading Mixgluten-free
- β1 cup Olive Oilfor frying

Preheat the oven to 400Β°F (200Β°C).

In a large bowl, combine the tofu, cauliflower, panko breadcrumbs, lemon juice, garlic powder, and basil. Mix well.

Using your hands, shape the mixture into small patties, about 1 1/2 inches (3.8 cm) in diameter and 1/2 inch (1.3 cm) thick.

Dip each patty into the breading mix, coating both sides evenly.

Heat about 1/2 inch (1.3 cm) of olive oil in a large skillet over medium-high heat.

Add a few of the breaded patties to the skillet (do not overcrowd) and fry until golden brown, about 3-4 minutes on each side.

Using a slotted spoon, transfer the fritters to a baking sheet lined with parchment paper.

Bake in the preheated oven for an additional 10-12 minutes, or until crispy and golden brown.
