French Eggplant Fritters
Crispy French eggplant fritters made with eggplant, citrus, and a hint of Russian spices.
Ingredients
- β1 large Eggplant
- β1 cup All-purpose flour
- β1/2 cup Breadcrumbs
- β1 tablespoon Citrus zest
- β1 teaspoon Russian spice blend
- β2 Eggs
- β1/4 cup Milk
- βto taste Salt
- βto coat Crispy fritter coating

1. Peel and finely chop the eggplant.

2. In a bowl, mix together the flour, breadcrumbs, citrus zest, and Russian spice blend.

3. In a separate bowl, beat the eggs and mix in the milk.

4. Add the chopped eggplant to the egg mixture and mix well.

5. Add the dry ingredients to the eggplant mixture and mix until just combined.

6. Heat a non-stick pan with a small amount of oil over medium heat.

7. Using a spoon, drop small amounts of the eggplant mixture into the pan.
