Crispy Vegetable Wonton Soup
A comforting and savory soup filled with crispy wontons and a variety of vegetables.
Ingredients
- β1 package Wonton wrappers (vegetarian)usually found in the produce section or international aisle
- β1/2 cup Vegetable oilfor frying wontons
- β1 medium Onionchopped
- β2 inches Gingersliced
- β1 cup Cabbageshredded
- β1 cup Carrotspeeled and grated
- β2 tablespoons Soy saucevegetarian
- β4 cups Vegetable brothvegetarian
Instructions

Heat 1/2 cup of vegetable oil in a wok or large skillet over medium-high heat.

Once hot, add the sliced ginger and cook for 1 minute.

Add the chopped onion and cook until softened, about 3-4 minutes.

Add the shredded cabbage and grated carrots. Cook until the vegetables are tender-crisp.

In a small bowl, whisk together 2 tablespoons of soy sauce and 4 cups of vegetable broth.

Pour the broth mixture into the wok or skillet and bring to a simmer.

Bring a large pot of water to a boil and cook the wonton wrappers according to package instructions.

Once cooked, drain and set aside.

Add the cooked wonton wrappers to the wok or skillet and cook for an additional 2-3 minutes, until crispy.

Serve the soup hot, garnished with chopped green onions if desired.
