Crispy Bean Quesadillas
A twist on traditional quesadillas, these crispy bean quesadillas are perfect for a quick and easy meal. Simply fill tortillas with a mixture of beans and cheese, then cook them until crispy and golden.
Ingredients
- β4-6 tortillas
- β1 can cooked beans
- β8 oz american cheese
- β1/2 cup caramelized onions
- β1/4 cup crispy bacon bits
Instructions

Preheat a large skillet over medium-high heat.

Add a small amount of oil to the skillet and cook the bacon bits until crispy.

Add the caramelized onions to the skillet and cook for an additional minute.

In a large bowl, mix together the cooked beans and american cheese.

Add the cooked bacon and onion mixture to the bowl and stir until combined.

Place a large tortilla in the skillet and sprinkle a quarter of the bean and cheese mixture onto half of the tortilla.

Fold the tortilla in half and cook for 2-3 minutes, until the tortilla is crispy and the filling is heated through.

Flip the quesadilla and cook for an additional 2 minutes, until the other side is crispy and golden.
