Crispy Bitter Stir-Fry
A spicy gluten-free stir-fry made with crispy bitter melon, potato, and a hint of stir-fry sauce.
Ingredients
- β2 medium bitter melon
- β1 large potatopeeled and diced
- β2 tablespoons coconut oil
- β2 cloves garlicminced
- β2 tablespoons stir-fry sauce (gluten-free)
Instructions

Heat 1 tablespoon of coconut oil in a large skillet over medium-high heat.

Add the diced potato and stir-fry until it starts to brown, about 3-4 minutes.

Add the minced garlic and stir-fry for another minute.

Add the sliced bitter melon and stir-fry until it starts to soften, about 4-5 minutes.

Add the remaining 1 tablespoon of coconut oil, stir-fry sauce, and stir well to combine.

Cook for another 2-3 minutes, until the bitter melon is tender and the sauce has thickened.
