Thai Pork Casserole
A spicy and flavorful Thai-inspired casserole dish, featuring marinated pork and a variety of vegetables.
Ingredients
- β1 pound ground pork
- β1 cup, sliced cherry
- β2 cups, mixed vegetables (e.g., bell peppers, carrots) classic
- β1 cup, uncooked rice german
- β1 can, full-fat coconut milk
- β2 tablespoons soy sauce
- β1 tablespoon fish sauce
- β2 tablespoons brown sugar
- β2 tablespoons olive oil
- β2 cloves, minced garlic

Preheat oven to 375Β°F (190Β°C).

In a large skillet, heat 1 tablespoon of olive oil over medium-high heat.

Add the sliced cherry and cook until tender, about 3-4 minutes.

Add the mixed vegetables and cook until tender, about 5 minutes.

In a separate pan, cook the ground pork over medium-high heat, breaking it up with a spoon, until browned, about 5-7 minutes.

Add the cooked rice to the pork mixture and stir to combine.

Add the cooked vegetable mixture to the pork and rice mixture and stir to combine.

In a separate bowl, whisk together the coconut milk, soy sauce, fish sauce, and brown sugar.

Pour the coconut milk mixture over the pork and vegetable mixture and stir to combine.

Transfer the mixture to a 9x13 inch baking dish and top with additional sliced cherry if desired.
