Peruvian Snapper Anticuchos
A citrusy and flavorful twist on traditional Peruvian anticuchos, featuring snapper skewers and a tangy marinade.
Ingredients
- β1 pound snappercut into 1-inch pieces
- β1/2 cup red onionthinly sliced
- β1/4 cup citrusy marinade (see below)
- β2 tablespoons peruvian pepperoptional
- β2 tablespoons quick fix sauce (see below)
- β10-12 fix skewerssoaked in water for 30 minutes

1. Preheat grill to medium-high heat.

2. In a large bowl, whisk together citrusy marinade and peruvian pepper (if using).

3. Add the snapper pieces to the marinade and toss to coat. Cover and refrigerate for at least 30 minutes.

4. Thread the marinated snapper onto the fix skewers.

5. Brush the grill grates with oil to prevent sticking.

6. Grill the anticuchos for 8-10 minutes, turning occasionally, or until cooked through.

7. While the anticuchos are cooking, warm the quick fix sauce in a small saucepan over low heat.

8. Brush the warmed quick fix sauce onto the anticuchos during the last minute of cooking.
