Croatian Tofu Stir Fry
A light and indulgent Croatian-inspired stir fry with crispy tofu and a squeeze of citrus.
Ingredients
- β1 block Extra-firm tofuDrained and cut into bite-sized pieces
- β2 tbsp Citrusy marinadeMade by mixing orange juice, lemon juice, and olive oil
- β1 medium Red onionThinly sliced
- β1 medium Bell pepperThinly sliced
- β1 tsp Croatian seasoning blendAvailable at most specialty stores or online
- β2 tbsp Coconut oilFor frying
- β1/4 cup Fresh parsleyChopped for garnish
- β4 Lime wedgesFor serving

1. In a small bowl, whisk together citrusy marinade ingredients and pour over tofu. Let marinate for at least 15 minutes.

2. Heat 1 tablespoon of coconut oil in a large skillet or wok over medium-high heat.

3. Add red onion and bell pepper to the skillet and cook for 5-7 minutes, or until tender.

4. Remove tofu from marinade and add to the skillet with the onion and bell pepper. Cook for an additional 5-7 minutes, or until tofu is golden brown and crispy.

5. Add coconut oil to the skillet and stir in Croatian seasoning blend.

6. Serve tofu and vegetables hot, garnished with chopped parsley and a squeeze of lime juice.
