Greek Corn Fritters
Crispy corn fritters with a hint of citrus and a touch of Greek flair. A perfect snack or side dish.

- β1/2 cup Greek yogurt
- β2 tbsp Orange marmalade
- β1 Egg
- β1/4 cup Chopped fresh parsley
- β1/4 tsp Salt
- β1/4 tsp Black pepper

In a large bowl, whisk together cornmeal, yogurt, marmalade, egg, parsley, salt, and pepper.

Heat about 1/2 inch of oil in a large skillet over medium heat.

Using a 1/4 cup measuring cup, scoop the corn mixture into the oil.

Flatten the mixture slightly with a spatula.

Cook the fritters for about 4 minutes on each side, until golden brown and crispy.
