Thai Shrimp Tacos
A Mexican twist on a Thai-inspired dish, featuring succulent shrimp in a flavorful salad.
Ingredients
- β12 oz chewy shrimppeeled and deveined
- β2 tbsp citrusylime juice
- β1 tsp thai pastered curry
- β4 cups mixed greensfor salad
- β1 cup red cabbageshredded
- β1/4 cup cilantrochopped

1. In a large pan, heat 1 tsp of oil over medium-high heat.

2. Add the shrimp and cook for 2-3 minutes per side, until pink and cooked through.

3. Remove the shrimp from the pan and set aside.

4. Add the citrusy to the pan and cook for 1 minute, scraping up any browned bits.

5. Stir in the thai paste and cook for an additional minute.

6. Add the mixed greens, red cabbage, and cilantro to the pan, and toss to combine.

7. Slice the cooked shrimp and add to the salad.
