Keto Buckwheat Crumble Bites
A delicious keto dessert made with buckwheat, chewy texture, and a hint of citrusy flavor.
Ingredients

- β1/2 cup almond flour
- β1/4 cup granulated sweetener (e.g. Swerve)
- β1/2 cup unsalted butter
- β2 large eggs
- β1 tsp zest of 1 lemon
- β1 cup crumble (store-bought or homemade)

Preheat oven to 350Β°F (175Β°C).

In a medium bowl, combine buckwheat groats, almond flour, and granulated sweetener.

In a separate bowl, whisk together eggs and lemon zest.

Add the wet ingredients to the dry ingredients and mix until a dough forms.

Roll the dough into small balls (about 1 inch in diameter) and place on a baking sheet lined with parchment paper.

Bake for 15-20 minutes, or until the edges are lightly golden.

While the bites are baking, melt the butter in a small saucepan over low heat.
