Citrus Chicken Pasta
A vibrant and flavorful gluten-free pasta dish made with chicken, citrus, and a hint of Venezuelanness.
Ingredients
- β1 pound, cut into bite-sized pieces chicken breast
- β8 ounces Venezuelan pastamake sure to choose a gluten-free option
- β2 tablespoons freshly squeezed orange juice
- β1 tablespoon lemon zest
- β2 tablespoons olive oil
- β2 cloves, minced garlicadjust to taste
- βto taste salt
- βto taste black pepper
- β1/4 cup, chopped pickled red onion
- β1/4 cup, chopped fresh cilantro

1. Bring a large pot of salted water to a boil and cook the Venezuelan pasta according to the package instructions until al dente.

2. In a large skillet, heat the olive oil over medium-high heat.

3. Add the chicken to the skillet and cook for 5-6 minutes or until browned and cooked through.

4. Remove the chicken from the skillet and set aside.

5. Add the minced garlic to the skillet and cook for 1 minute or until fragrant.

6. Add the freshly squeezed orange juice and lemon zest to the skillet and cook for 2-3 minutes or until the sauce has reduced slightly.

7. Add the cooked chicken back into the skillet and toss to coat with the citrus sauce.

8. Add the cooked pasta to the skillet and toss with the chicken and citrus sauce.

9. Season with salt and black pepper to taste.

10. Serve hot, garnished with chopped pickled red onion and fresh cilantro.
