Cheesecake Spring Rolls
A unique Chinese-inspired dessert using cheesecake and spring roll wrappers. This sweet treat combines the flavors of a classic cheesecake with the crunch of a spring roll.
Ingredients
- β12-16 pieces Spring Roll Wrappers
- βstore-bought or homemade (8-inch square) Cheesecake
- β1/4 cup chopped Chives
- β1 tablespoon Granulated Sugar
- βas needed Water
- βfor frying Vegetable Oil

1. Preheat a deep frying pan or a deep fryer with about 2-3 inches of vegetable oil to 375Β°F (190Β°C).

2. Cut the cheesecake into small squares, about 1 inch per side.

3. In a small bowl, mix the chopped chives and granulated sugar.

4. Place a spring roll wrapper on a clean surface with one corner pointing towards you.

5. Place a piece of cheesecake in the center of the wrapper.

6. Brush the edges of the wrapper with a little water.

7. Sprinkle a pinch of the chive-sugar mixture onto the cheesecake.

8. Fold the bottom corner of the wrapper over the cheesecake, then fold in the sides and roll up the wrapper to form a tight cylinder.

9. Repeat with the remaining wrappers and cheesecake pieces.

10. When the oil is hot, carefully place a few of the spring rolls into the oil and fry until they are golden brown, about 2-3 minutes on each side.

11. Remove the spring rolls from the oil and place them on a paper towel-lined plate to drain any excess oil.
