Stir-Fried Egg Tacos
A twist on traditional tacos, this dish combines the chewiness of egg and the flavors of portuguese cuisine.
Ingredients
- β4 eggslarge eggs
- β1 loaf portuguese breadday-old or stale is best
- β4 chewy tortillascorn or flour, your choice
- β1/4 cup vegetable oilfor frying
- βto taste salt
- βto taste pepper

1. Crack the eggs into a bowl and whisk them together. Set aside.

2. Slice the portuguese bread into thin strips.

3. Heat 1/4 cup of vegetable oil in a large skillet over medium-high heat.

4. Fry the bread strips until crispy and golden brown, about 2-3 minutes per side.

5. Remove the bread from the skillet and set aside on a paper towel-lined plate.

6. Add a little more oil to the skillet if necessary. Pour in the whisked eggs and scramble them until cooked through.

7. Warm the chewy tortillas by wrapping them in a damp paper towel and microwaving for 20-30 seconds.

8. Assemble the tacos by spooning the scrambled eggs onto a tortilla, followed by a few pieces of fried bread and a sprinkle of salt and pepper.
