French Tofu Lasagne
A French-inspired take on the classic Italian dish, using tofu instead of traditional meat and adding some French flair with cheese and spices.
Ingredients
- β8-10 noodles chewy lasagne noodles
- β1 block (14 oz) midnight tofu
- β1/4 cup chopped vietnamese mint
- β1 cup grated cheeseA mix of cheddar and gouda works well
- β2 tbsp olive oil
- βto taste salt
- βto taste pepper
- β1 tsp garlic powder

Preheat the oven to 375Β°F (190Β°C).

Cook the lasagne noodles according to the package instructions. Drain and set aside.

In a large skillet, heat the olive oil over medium heat. Add the chopped mint and cook for 1-2 minutes, until fragrant.

Add the tofu to the skillet and cook until golden brown, breaking it up with a spoon as it cooks.

In a large bowl, combine the cooked pasta, tofu mixture, and grated cheese. Season with salt, pepper, and garlic powder.

In a 9x13 inch baking dish, spread a layer of the pasta mixture on the bottom. Top with a layer of lasagne noodles, then repeat the process until all the ingredients are used up.

Cover the dish with aluminum foil and bake for 30 minutes. Remove the foil and bake for an additional 10-15 minutes, until the cheese is melted and bubbly.

Let the lasagne rest for 10-15 minutes before serving.
