Cook the sausage in a large skillet over medium-high heat, breaking it up with a spoon as it cooks.

Once the sausage is browned, add the diced onions and cook until they're caramelized, stirring occasionally.

While the sausage and onions are cooking, warm the tortillas in the oven or by wrapping them in a damp paper towel and microwaving for 20-30 seconds.
