Mexican Chicken Pilaf
A flavorful and easy-to-make Mexican-inspired dish featuring chicken, pilaf, and spices.
Ingredients

- β1 cup uncooked white rice pilaf
- β1 tablespoon Thai red curry paste thai
- β2 tablespoons butter buttery
- β1 cup diced tomatoes juicy
Instructions

Heat 1 tablespoon of butter in a large skillet over medium-high heat.

Add the chicken and cook until browned and cooked through, about 5-7 minutes.

Remove the chicken from the skillet and set aside.

In the same skillet, add the remaining 1 tablespoon of butter and the Thai red curry paste.

Cook for 1 minute, until fragrant.

Add the pilaf and cook for 2-3 minutes, until lightly toasted.
