Celeriac Wrap with Crunchy Slaw
A refreshing and crunchy wrap filled with roasted celeriac, topped with a tangy slaw made from bitter greens. Perfect for a light lunch or dinner.
Ingredients
- β1 large Celeriac
- β1 Wrapwhole wheat
- β4 cups Bitter Greenssuch as kale or collard greens
- β1 cup Crunchy Vegetablesuch as carrots or bell peppers
- β2 tbsp Portuguese Olive Oil
- βto taste Salt
- βto taste Black Pepper
- β2 tbsp Lemon Juice

Preheat oven to 400Β°F (200Β°C).

Peel and cube the celeriac, and place on a baking sheet.

Drizzle with olive oil and season with salt and pepper. Roast for 20-25 minutes, or until tender.

Meanwhile, prepare the slaw by chopping the bitter greens and crunchy vegetable. In a large bowl, combine the chopped greens and vegetable.

In a small bowl, whisk together the lemon juice and olive oil. Pour the dressing over the slaw and toss to combine.

Warm the wrap by wrapping it in a damp paper towel and microwaving for 20-30 seconds.

Assemble the wrap by placing the roasted celeriac on the wrap, followed by a spoonful of the slaw.
