Thai Duck Curry
A flavorful and aromatic Thai curry made with tender duck and a blend of spices. Serve with steamed rice or noodles for a delicious and satisfying meal.
Ingredients
- β1 lb (450g) duck breast
- β2 tbsp (30g) aromatic curry pasteThai red curry paste
- β1 can (14 oz/400ml) coconut milk
- β2 tbsp (30g) fish sauce
- β1 tsp (5g) sugar
- β1 tsp (5g) tom yum soup pasteoptional
- β2 spicy chilies
- β1/4 cup (15g) fresh cilantrochopped

1. Cut the duck breast into bite-sized pieces and season with salt.

2. Heat 2 tablespoons of oil in a large pan over medium-high heat.

3. Add the duck to the pan and cook until browned, about 5 minutes.

4. Remove the duck from the pan and set aside.

5. Add the curry paste to the pan and cook, stirring constantly, for 1-2 minutes.

6. Add the coconut milk, fish sauce, sugar, and tom yum paste (if using) to the pan.

7. Stir to combine and bring to a simmer.

8. Return the duck to the pan and cook, stirring occasionally, until the sauce has thickened and the duck is cooked through, about 10-15 minutes.
