Irish Beef Stew
A hearty Irish stew made with tender beef, potatoes, and carrots. Perfect for a chilly evening.
Ingredients
- β1 pound beef stew meatcut into 1-inch cubes
- β1 large onionchopped
- β2 medium carrotspeeled and chopped
- β2 large potatoespeeled and chopped
- β2 tablespoons all-purpose flourfor thickening
- β2 cups beef brothlow-sodium
- β1 cup red wineoptional
- β1 teaspoon saltto taste
- β1/2 teaspoon black pepperto taste
- β1 tablespoon fresh thymechopped

Heat oil in a large pot over medium-high heat. Add the beef and cook until browned, about 5 minutes.

Remove the beef from the pot and set aside. Add the onion and cook until softened, about 5 minutes.

Add the carrots and potatoes to the pot and cook for 5 minutes.

Add the flour to the pot and cook for 1 minute.

Gradually add the beef broth and red wine to the pot, whisking constantly.

Return the beef to the pot and bring to a boil. Reduce the heat to low and simmer, covered, for 1 1/2 hours.

Season with salt and pepper to taste. Serve hot, garnished with fresh thyme.
