Lamb Tagine with Mediterranean Flair

- β1.5 lbs Lamb shoulderCut into 2-inch pieces
- β2 tbsp Olive oilUse high-quality extra-virgin olive oil
- β1 large OnionDiced
- β3 cloves GarlicMinced
- β2 inches GingerGrated
- β1 tsp CuminGround
- β1/2 tsp CinnamonGround
- β1/4 tsp PaprikaSmoked
- β1 tsp SaltUse kosher salt
- β1/2 tsp Black pepperFreshly ground

Heat oil in a large Dutch oven over medium-high heat.

Brown lamb pieces in batches until browned, about 5 minutes.

Remove lamb from pot and set aside.

Reduce heat to medium and add onion, garlic, and ginger.

Cook, stirring occasionally, until onion is softened, about 8 minutes.

Add cumin, cinnamon, paprika, salt, and pepper.

Cook, stirring constantly, for 1 minute.

Return lamb to pot and stir to coat with spice mixture.

Add 1 cup of water to the pot and bring to a boil.

Transfer pot to the oven and cook, covered, at 300Β°F (150Β°C) for 2 1/2 hours.
