Norwegian Lamb Stew
A hearty stew made with Norwegian lamb and a zesty twist.

Ingredients
- β1.5 lbs Norwegian lamb shouldercut into 1-inch cubes
- β2 tbsp Zesty mustard
- β1 cup Red wine
- β1 large Onionchopped
- β3 cloves Garlicminced
- β4 medium Carrotspeeled and chopped
- β3 large Potatoespeeled and chopped
- β2 cups Stew beef broth
- βto taste Salt
- βto taste Black pepper

Instructions

Heat oil in a large Dutch oven over medium-high heat.

Brown lamb in batches, then set aside.

Add more oil if needed, then sautΓ© onion and garlic until softened.

Add carrots and potatoes, cook for 5 minutes.

Add red wine, scraping up browned bits.

Return lamb to the pot, add broth and bring to a boil.

Reduce heat to low, cover and simmer for 2 hours.
