Thai-Style Carnaroli Risotto
A creamy and flavorful risotto infused with Thai-inspired flavors, featuring zesty som tam sauce.

- β2 tablespoons Zesty som tam saucestore-bought or homemade
- β1 teaspoon Thai red curry paste
- β1 cup Coconut milk
- β4 cups Vegetable broth
- β1/4 cup Fresh cilantro
- β2 Lime wedges
- βto taste Salt

Heat the vegetable broth in a separate pot and keep warm.

In a large skillet, heat 2 tablespoons of oil over medium heat.

Add the Thai red curry paste and cook for 1 minute, stirring constantly.

Add the Carnaroli rice and cook for 2-3 minutes, stirring constantly.

Add the coconut milk and stir to combine.

Add 1 cup of the warm broth to the rice mixture and stir to combine.

Continue adding the broth, 1 cup at a time, stirring constantly and allowing each portion to absorb before adding the next.
