Uruguayan Empanadas
Delicious empanadas filled with a flavorful mixture of cheese and spices, inspired by the flavors of Uruguay. A perfect vegetarian snack or appetizer.
Ingredients
- β2 cups Flour
- β1 cup, shredded Cheese (Monterey Jack or similar)
- β1 tablespoon Spicy pepper flakes
- β1 teaspoon Zesty paprika
- β1 package Fluffy puff pastry
- β1 cup, sliced Kabanos or Uruguayan-style sausage (vegetarian substitute)
Instructions

Preheat the oven to 375Β°F (190Β°C).

Roll out the puff pastry to a thickness of 1/8 inch (3 mm).

Cut out circles of dough using a cookie cutter or the rim of a glass.

In a bowl, mix together the shredded cheese, spicy pepper flakes, and zesty paprika.

Place a spoonful of the cheese mixture onto one half of each dough circle.

Top with a few slices of kabanos or sausage.

Fold the other half of the dough over the filling and press the edges to seal.

Brush the tops of the empanadas with a little water and sprinkle with additional cheese.

Place the empanadas on a baking sheet lined with parchment paper.
