Russian-Style Skillet Stuffed Peppers

Ingredients

- ●4 Peppers (any color)
- ●8 oz Kabanosuse as a substitute for sausage
- ●1 cup Russian-style sauerkraut
- ●1 cup Mushrooms
- ●1 Onionany color
- ●2 tbsp Tomato paste
- ●1 cup Vegetable broth
- ●to taste Salt and pepper

Preheat the oven to 375°F (190°C).

Cut the tops off the peppers and remove the seeds.

In the skillet, sauté the mushrooms, onion, and kabanos until the onion is translucent.

Add the sauerkraut and cook for 2-3 minutes.

Add the tomato paste and vegetable broth, stirring to combine.

Stuff each pepper with the skillet mixture and place them in a baking dish.

Cover the peppers with foil and bake for 25 minutes.
