Saudi Arabian Lamb Kebabs
A traditional Middle Eastern dish featuring marinated lamb kebabs grilled to perfection, served with a side of zesty sauce.
Ingredients
- β1 pound Lamb shoulder, cut into 1-inch cubes
- β1/4 cup Zesty sauce (see below for ingredients and instructions)
- β2 teaspoons Arabian spices (cumin, coriander, cinnamon, cardamom)
- β2 tablespoons Olive oil
- βto taste Salt and black pepper
- β1 cup Large onion, chopped
- β1 cup Bell pepper, chopped
- β1 cup Tomato, chopped
- β1/4 cup Fresh parsley, chopped

In a small bowl, whisk together zesty sauce ingredients (see below).

In a large bowl, whisk together Arabian spices, olive oil, salt, and black pepper.

Add lamb cubes to the spice mixture and toss to coat.

Thread lamb cubes, onion, bell pepper, and tomato onto skewers.

Grill skewers over medium-high heat, turning occasionally, until lamb reaches 145Β°F (63Β°C) for medium-rare.

Brush skewers with zesty sauce during the last 2 minutes of grilling.

Serve skewers hot, garnished with chopped parsley and additional zesty sauce if desired.

To make zesty sauce, combine 1/2 cup plain yogurt, 1 tablespoon lemon juice, 1 tablespoon chopped fresh parsley, and 1 minced garlic clove in a small bowl. Mix well to combine.
