Roasted Zesty Chicken Tagine
A flavorful and aromatic Indian-inspired dish made with roasted chicken, zesty spices, and a hint of tagine.
Ingredients
- β500g chicken breastsboneless, skinless
- β50g roasted almondschopped
- β1 ukrainian ugli fruitpeeled and chopped
- β50ml zesty lemon juicefreshly squeezed
- β2 tsp tagine spice mixstore-bought or homemade
- β20ml ghee or vegetable oilfor cooking
- β1 tsp saltto taste

Preheat the oven to 200Β°C (400Β°F).

In a large bowl, whisk together ghee or oil, salt, and tagine spice mix.

Add the chicken breasts and mix well to coat.

Transfer the chicken to a baking sheet and roast for 25-30 minutes, or until cooked through.

Meanwhile, heat a small saucepan over medium heat.

Add the chopped ugli fruit and cook, stirring occasionally, for 5-7 minutes, or until caramelized.

Stir in the roasted almonds and zesty lemon juice.

To serve, slice the roasted chicken and serve with the ugli fruit and almond mixture spooned over the top.
