Korean Beef Tacos
A fusion twist on traditional tacos, featuring marinated Korean-style beef, roasted vegetables, and a zesty slaw.
Ingredients

- β2 teaspoons korean chili flakes (gochugaru)or to taste
- β2 tablespoons soy sauceor to taste
- β1 tablespoon brown sugaror to taste
- β1 cup zesty slaw (store-bought or homemade)store-bought or homemade
- β1 cup roasted vegetables (such as carrots, bell peppers, and onions)roasted in the oven
- β8-10 tortillas (corn or flour)for tacos
- β1/4 cup ssam sauce (store-bought or homemade)store-bought or homemade
- β1/4 cup green onionschopped
- β1/4 cup cilantrochopped

In a large bowl, whisk together chili flakes, soy sauce, and brown sugar. Add sliced beef and marinate for at least 30 minutes.

Preheat oven to 400Β°F (200Β°C). Toss roasted vegetables with a drizzle of oil and season with salt and pepper. Roast for 20-25 minutes or until tender.

Heat a large skillet over medium-high heat. Remove beef from marinade, letting any excess liquid drip off. Cook for 3-4 minutes per side or until cooked to your desired level of doneness.

Warm tortillas by wrapping them in a damp paper towel and microwaving for 20-30 seconds.

Assemble tacos by placing cooked beef onto a tortilla, followed by roasted vegetables, zesty slaw, and a drizzle of ssam sauce. Garnish with green onions and cilantro.
