Peruvian Chicken Gallina
A traditional Peruvian dish featuring chicken cooked in a zesty gallina sauce.
Ingredients
- β1 1/2 pounds boneless, skinless chicken breasts
- β2 aji amarillo pepper
- β1 medium onion
- β3 cloves garlic
- β1 cup zesty gallina sauce
- β1 cup chicken broth
- β1/4 cup fresh cilantro
- βto taste salt
- βto taste black pepper

Preheat oven to 375Β°F (190Β°C).

Season the chicken with salt and black pepper.

In a large skillet, heat 2 tablespoons of oil over medium-high heat.

Add the chicken to the skillet and cook until browned on both sides, about 5-6 minutes.

Transfer the chicken to a baking dish and set aside.

In the same skillet, add the onion and cook until softened, about 3-4 minutes.

Add the garlic and cook for an additional minute.

Add the aji amarillo pepper and cook for 1-2 minutes, until fragrant.

Add the zesty gallina sauce and chicken broth to the skillet, stirring to combine.

Bring the sauce to a simmer and cook for 2-3 minutes, until slightly thickened.

Pour the sauce over the chicken in the baking dish.

Cover the dish with aluminum foil and bake for 20-25 minutes, or until the chicken is cooked through.
