Peruvian Chicken Fritters with Zesty Basmati Rice

In a large pot, heat 2 cups of water and add 1 cup of uncooked basmati rice. Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes, or until the rice is tender and fluffy.

In a large bowl, combine chicken breast pieces, chopped onion, zesty seasoning, fritters seasoning, and salt. Mix well.

Heat 1/4 cup of vegetable oil in a large non-stick skillet over medium-high heat. Using a spoon, drop small portions of the chicken mixture into the oil and flatten slightly into fritters.
