Norwegian Beef Stew
A hearty, keto beef stew with a twist of Norwegian flavors.
Ingredients
- β1.5 lbs Beef (sirloin or ribeye), cut into 1-inch cubesChoose a high-fat cut for keto
- β2 tsp Zesty Norwegian Beef SeasoningStore-bought or homemade
- β2 tbsp Olive oilFor browning the beef
- β1 large Onion, dicedCaramelize for depth of flavor
- β3 cloves Garlic, mincedMince for optimal flavor
- β2 tbsp All-purpose flourFor thickening the stew
- β2 cups Beef brothHomemade or low-sodium store-bought
- β1/2 cup Heavy cream or half-and-halfOptional for creaminess
- β1 tsp Fresh thyme, choppedFor added flavor and aroma

Heat 1 tablespoon of olive oil in a large Dutch oven over medium-high heat.

Add the beef cubes and brown on all sides, about 5 minutes. Remove the browned beef from the pot and set aside.

Reduce heat to medium and add the remaining 1 tablespoon of olive oil.

Add the diced onion and cook, stirring occasionally, until caramelized, about 8 minutes.

Add the minced garlic and cook for 1 minute, stirring constantly.

Add the flour and cook for 1 minute, stirring constantly.

Gradually add the beef broth, whisking continuously, and bring to a boil.

Return the browned beef to the pot, cover, and transfer to the oven.

Bake at 300Β°F (150Β°C) for 2 hours or until the beef is tender.

Remove from the oven and stir in the Norwegian Beef Seasoning, heavy cream or half-and-half (if using), and chopped thyme.

Season with salt and pepper to taste.

Serve hot, garnished with fresh thyme and a side of cauliflower mash or a green salad.
