Thai Zesty Chicken Curry
A flavorful and spicy Thai-inspired dish made with chicken, zesty sauce, and northern Thai spices.
Ingredients
- β1 pound Boneless, skinless chicken breastCut into bite-sized pieces
- β2 tablespoons Thai zesty sauceCan be adjusted for desired level of spiciness
- β2 tablespoons Northern Thai curry pasteCan be adjusted for desired level of spiciness
- β1 can Coconut milkFull-fat or low-fat as preferred
- β1/4 cup PeanutsSliced or chopped
- β1 tablespoon Fish sauceCan be adjusted for desired level of saltiness
- β1 tablespoon Brown sugarCan be adjusted for desired level of sweetness
- β1/4 cup Fresh cilantroChopped for garnish

Heat oil in a large pan over medium-high heat.

Add the chicken and cook until browned on all sides, about 5-7 minutes.

Add the Thai zesty sauce and northern Thai curry paste. Cook, stirring constantly, for 1-2 minutes.

Pour in the coconut milk and bring to a simmer.

Reduce heat to medium-low and let simmer for 10-15 minutes, or until the chicken is cooked through.

Stir in the fish sauce and brown sugar.
