Middle Eastern Fattoush Salad with Zesty Pork Tenderloin
A refreshing salad from the Middle East featuring croutons, mixed greens, and a zesty grilled pork tenderloin. Perfect for a light meal or as a side dish.
Ingredients
- β1 (1 pound) Pork Tenderloin
- β2 tablespoons Pomegranate Molasses
- β2 tablespoons Olive Oil
- β2 tablespoons Lemon Juice
- β2 cloves Garlic
- βto taste Salt
- βto taste Black Pepper
- β4 cups Flatbreadpreferably day-old bread, cut into 1-inch cubes
- β4 cups Mixed Greens
- β1 cup Chopped Cucumber
- β1 cup Chopped Tomatoes
- β1 cup Chopped Red Onion
- β1 cup Parsleychopped
- βto taste Sumac

Preheat grill to medium-high heat. Season the pork tenderloin with salt, black pepper, and sumac.

Grill the pork tenderloin for 5-7 minutes per side, or until it reaches an internal temperature of 145Β°F. Let it rest for 5 minutes before slicing.

In a large bowl, whisk together pomegranate molasses, olive oil, lemon juice, garlic, salt, and black pepper.

Add the mixed greens, chopped cucumber, chopped tomatoes, chopped red onion, and chopped parsley to the bowl. Toss to combine.

In a small bowl, toss the flatbread cubes with a little bit of olive oil and salt. Grill or bake until crispy.

To assemble the salad, place a bed of mixed greens on a plate or in a bowl. Top with sliced pork tenderloin, croutons, and a drizzle of pomegranate molasses dressing.
