Middle Eastern Chicken Tagine

- β1/4 cup zesty olivespitted
- β2 teaspoons eastern spices (cumin, coriander, cinnamon)ground
- β1 teaspoon tagine spice blendground
- β1 large onionchopped
- β3 cloves garlicminced
- β1/2 cup dried apricotschopped
- β2 cups chicken brothlow-sodium
- β2 tablespoons honeyoptional

Heat oil in a large clay pot or Dutch oven over medium heat.
