Ethiopian Chicken Tikka Masala
A twist on the classic Indian dish, inspired by Ethiopian flavors.

Ingredients
- β2 tsp Ethiopian berbere spice mix (or regular berbere mix)adjust to taste
- β1 lb chicken breastboneless, skinless
- β8 oz fettuccineor substitute with other pasta of your choice
- β1 tsp kik alicha spice mix (or regular alicha spice mix)adjust to taste
- β1 cup zesty yogurtplain yogurt with a squeeze of lemon
- β1 cup jammy tomatoesdiced cherry tomatoes
- β1 cup mirepoix mixchopped onion, carrot, celery
- β2 tbsp vegetable oilfor cooking

Instructions

Heat oil in a pan over medium heat.

Add mirepoix mix and cook until softened.

Add chicken and cook until browned.

Add berbere spice mix, alicha spice mix, and yogurt.

Stir well and bring to a simmer.

Reduce heat to low and cook for 10-15 minutes.

Stir in jammy tomatoes and cook for an additional 2-3 minutes.
