Delicious Jamaican Koi Casserole
A Caribbean-inspired casserole that combines the flavors of Jamaica with the freshness of koi fish. Perfect for a dinner party.
Ingredients
- β1 pound Koi fishFresh or frozen, thawed
- β2 teaspoons Jamaican jerk seasoningHomemade or store-bought
- β1 bunch Pak choiStems separated, leaves chopped
- β1 cup CasseroleCrushed or cubed
- β2 tablespoons Zesty lime juiceFreshly squeezed
- β2 tablespoons Olive oil
- β2 cloves GarlicMinced
- β1 teaspoon Salt
- β1/2 teaspoon Black pepper

Preheat oven to 400Β°F (200Β°C).

Season the koi fish with Jamaican jerk seasoning, salt, and black pepper.

Heat olive oil in a large skillet over medium-high heat. Add garlic and cook for 1 minute.

Add the koi fish to the skillet and cook for 3-4 minutes per side, or until cooked through.

In a separate skillet, heat a little olive oil over medium heat. Add the pak choi stems and cook for 2-3 minutes, or until slightly tender.

Add the chopped leaves to the skillet and cook for an additional 1-2 minutes, or until wilted.

In a large bowl, combine the cooked koi fish, pak choi mixture, and casserole.

Drizzle zesty lime juice over the top and toss to combine.
