Algerian Tortilla Quesadilla
A flavorful twist on a classic quesadilla, this Algerian-inspired dish features zesty and garlicky flavors.
Ingredients
- β4 Algerian tortillas
- β1/2 cup Garlicky hummus
- β1/4 teaspoon Zesty harissa
- β1/4 cup Chopped fresh parsley
- β1 cup Shredded cheese (Monterey Jack or similar)
- β1/4 cup Sliced red onion
Instructions

Heat a large non-stick skillet or griddle over medium heat.

Place a tortilla in the skillet and spread a quarter of the hummus on half of the tortilla.

Sprinkle a quarter of the cheese, some parsley, and a pinch of harissa on top of the hummus.

Fold the tortilla in half to enclose the filling.

Cook for 2-3 minutes or until the tortilla is crispy and the cheese is melted.

Flip the quesadilla and cook for an additional 2-3 minutes or until the other side is crispy.
