Tomato Zesty German Soup
A hearty German soup with the added zing of fresh tomatoes and Australian zesty spices.
Ingredients
- β2 tsp Australian zesty spicesavailable at most supermarkets
- β3 medium Fresh tomatoesdiced
- β1 medium Fresh onionchopped
- β3 cloves Fresh garlicminced
- β4 cups Vegetable brothstore-bought or homemade
- β2 tbsp Tomato pastecanned or fresh
- βto taste Cracked black pepperfreshly ground
- βto taste Saltpreferably sea salt
- β1/4 cup Fresh parsleychopped, for garnish
- β4-6 slices Crusty German breadfor serving

Heat the zesty spices in a large pot over medium heat.

Add the diced onion and sautΓ© until translucent, about 5 minutes.

Add the minced garlic and cook for 1 minute, until fragrant.

Add the vegetable broth, tomato paste, salt, and pepper. Stir to combine.

Bring the mixture to a boil, then reduce the heat to low and simmer for 15-20 minutes.

Add the diced tomatoes and cook for an additional 5-7 minutes, until heated through.

Taste and adjust the seasoning as needed.

Serve hot, garnished with chopped parsley and crusty German bread on the side.
