Maqluba with Quinoa and Eastern Spices
A traditional Middle Eastern dish with a twist, featuring quinoa and a zesty fermented sauce.
Ingredients
- β1 cup Quinoa
- β2 tbsp Olive oil
- β1 medium Onionchopped
- β3 cloves Garlicminced
- β1 tsp Middle Eastern spices
- β2 tbsp Zesty fermented sauce
- βto taste Salt
- βchopped Fresh parsleyfor garnish
Instructions

Heat the olive oil in a large skillet over medium-high heat.

Add the chopped onion and cook until softened, about 5 minutes.

Add the minced garlic and cook for an additional 1-2 minutes.

Add the Middle Eastern spices and cook for 1 minute.

Add the quinoa and cook for 2-3 minutes, stirring frequently.

Add 2 cups of water to the skillet and bring to a boil.

Reduce the heat to low, cover, and simmer for 15-20 minutes, or until the quinoa is tender.

Stir in the zesty fermented sauce and season with salt to taste.
