French Lamb Stew with Berbere Spice
A hearty, flavorful stew originating from France, infused with the bold flavors of Ethiopian berbere spice.
Ingredients
- β1.5 kg Lamb shouldercut into 2-inch cubes
- β2 tbsp Berbere spicestore-bought or homemade
- β2 tbsp Olive oilfor browning lamb
- β2 Onionschopped
- β2 Carrotspeeled and chopped
- β2 Potatoespeeled and chopped
- β1 cup Red winedry red wine
- β2 cups Beef brothhomemade or store-bought
- β1 tbsp Tomato pasteoptional
Instructions

Heat 1 tbsp olive oil in a large Dutch oven over medium-high heat.

Brown lamb cubes until browned on all sides, about 5 minutes. Remove from pot and set aside.

Reduce heat to medium and add remaining 1 tbsp olive oil. Add chopped onions and cook until softened, about 5 minutes.

Add chopped carrots and potatoes, cooking for 5 minutes.

Add berbere spice, red wine, beef broth, and browned lamb. Stir to combine.

Bring stew to a boil, then cover and transfer to the oven.

Bake at 300Β°F (150Β°C) for 2.5 hours, or until lamb is tender.

Season with salt and pepper to taste.
