Slovakian Mushroom Stew
A hearty and earthy stew originating from Slovakia, made with sautéed mushrooms and a zesty twist.
Ingredients
- ●2 cups Mushroombutton or cremini
- ●1 pound Slovakian Sausageoptional
- ●1 medium Onionchopped
- ●1 medium Carrotpeeled and chopped
- ●2 medium Potatopeeled and chopped
- ●2 tablespoons Tomato paste
- ●1 can Diced tomatoes
- ●1/2 cup Red wine
- ●4 slices Baconoptional
- ●1 teaspoon Slovakian paprika

Heat the oil in a large pot over medium heat.

Add the chopped onion and cook until softened.

Add the chopped carrot and cook for 5 minutes.

Add the chopped potato and cook for 5 minutes.

Add the mushrooms and cook until they release their liquid.

Add the Slovakian sausage (if using), bacon (if using), and paprika.

Add the diced tomatoes, tomato paste, and red wine.

Stir well to combine.

Bring to a boil, then reduce the heat to low and simmer for 20 minutes.
