Vegan Apricot Fideua
A twist on traditional Spanish fideua, this vegan version replaces seafood with sweet and tangy apricots.

- β1 cup Apricots
- β2 cups Zesty Spanish rice
- β8 oz Fideua pasta
- β2 cups Vegan vegetable broth
- β2 tbsp Olive oil
- β1/4 cup Fresh parsley

Instructions

Bring the vegan vegetable broth to a boil in a large pot.

Add the fideua pasta and cook according to package instructions.

In a separate pan, heat the olive oil over medium heat.

Add the zesty Spanish rice and cook until lightly toasted.

Add the apricots to the pan and stir to combine.

Once the pasta is cooked, drain and add to the pan with the apricot mixture.
