Traditional Irish Lamb Stew
A hearty and flavorful Irish lamb stew made with tender lamb, crunchy vegetables, and a hint of zesty spices.
Ingredients
- β1 1/2 pounds Lamb shoulderCut into 2-inch cubes
- β2 medium CarrotsPeeled and chopped
- β2 large PotatoesPeeled and chopped
- β1 large OnionsChopped
- β1/2 cup Zesty Guinness stout
- β2 tablespoons Flour
- β2 tablespoons Butter
- βto taste Salt and pepper
- βchopped (optional) Fresh parsley

Heat butter in a large Dutch oven over medium-high heat.

Add lamb and cook until browned on all sides, about 5 minutes.

Remove lamb from pot and set aside.

Add flour to pot and cook for 1 minute.

Gradually add Guinness stout, whisking constantly.

Return lamb to pot and add carrots, potatoes, onions, salt, and pepper.

Bring to a boil, then cover and transfer to oven.

Bake at 300Β°F (150Β°C) for 2 1/2 hours, or until lamb is tender.

Skim fat from surface and serve hot, garnished with chopped parsley if desired.
