Irish Beef Stew
A hearty and comforting beef stew inspired by Irish cuisine, with tender brisket and vegetables in a rich broth.
Ingredients

- β1 large Onionchopped
- β4 medium Carrotspeeled and chopped
- β2 large Potatoespeeled and chopped
- β4 cups Zesty beef brothhomemade or store-bought
- β2 tablespoons All-purpose flourfor thickening
- β1 teaspoon Saltto taste
- β1/2 teaspoon Black pepperto taste
- β2 tablespoons Butter

Brown the brisket in a large Dutch oven over medium-high heat. Remove the browned brisket from the pot and set it aside.

Reduce heat to medium and cook the chopped onion until softened, about 5 minutes.

Add the chopped carrots and potatoes to the pot and cook for an additional 5 minutes.

Add the beef broth, browned brisket, salt, and black pepper to the pot. Stir to combine.

Bring the stew to a boil, then cover the pot and transfer it to the preheated oven.

Bake the stew for 2 1/2 to 3 hours, or until the brisket is tender and the vegetables are cooked through.

Remove the pot from the oven and stir in the flour to thicken the stew.
