Zesty Chicken Curry
A flavorful and spicy chicken curry dish with a zesty twist, perfect for a weeknight dinner.
Ingredients
- β1 lb chicken breastcut into bite-sized pieces
- β1 cup zesty curry saucestore-bought or homemade
- β1 bunch chinese broccolicut into florets
- β2 tsp curry powderadjust to taste
- β1 tsp saltadjust to taste
- β pepperto taste
- β2 tbsp coconut oilfor sautΓ©ing
- β1 cup wateradjust to sauce consistency
- β1/4 cup green onionschopped (optional)
Instructions

Heat 1 tablespoon of coconut oil in a large skillet over medium-high heat.

Add the chicken to the skillet and cook until browned, about 5-7 minutes.

Remove the chicken from the skillet and set aside.

In the same skillet, add the remaining 1 tablespoon of coconut oil.

Add the broccoli to the skillet and cook until tender, about 3-5 minutes.

Add the curry powder to the skillet and cook for 1 minute.

Add the zesty curry sauce, water, salt, and pepper to the skillet.
